"It is really incredible how the misinformation on saffron is so rampant
in the USA: yesterday I got a call from a pasta manufacturer that was
told by the “exporter” that the price has quadrupled because the saffron
harvest had failed in Spain. Wake up everyone! There was no draught in
Spain, the draught was in Iran and that is why the price of Spanish
saffron quadrupled, because they get most all their saffron from IRAN. Again
Spain produces ONLY 400 kg of saffron and they export 12,000 to 20,000
to the USA ALONE. Where do you think they get it if they do not grow it?
Remember, in Europe, when a commodity comes into the European Union
“bulk”, once they repack it becomes “a product of the country that packs
it”, which does not mean it was grown there. Entiende?"

Special Scalloped Potatoes (4 Servings)
1 capsule (.125 g) Saffron
threads
1 1/4 cups half & half
3 Tbsp. butter
1 Tbsp. virgin olive oil
2 Large yellow onions, sliced thin
2 garlic cloves, minced
4 large white potatoes, sliced thin
Heat half & half, remove from heat and steep saffron for 20 min. Sauté
onions and garlic until limp in olive oil and butter. Do not brown.
Butter large pie plate and layer with potato and onion slices. Pour half
& half over the top and bake at 350º(175º C), covered with tin foil, for
an hour. Remove foil and bake an additional 15 min. or until top is
browned. Serve in wedges. Serves 4.
Saffron HINTS/FACTS
Just a few threads of saffron are enough to give an enhancing
color and special touch of flavor to rice, soups, stews, sauces, sweets
and bakery.
Usage: Dissolve saffron, for about 20 minutes, in something hot,
something acidic or something alcoholic, depending on the ingredients of
the recipe. To extract all the aroma, flavor and color rub the saffron
with a spoon.

Our saffron threads are 3/8" to 1/2" in length.
We only use the part of the stigma that has saffron. As a result, our
saffron is free of any impurities.
What is coloring strength?
The general range of saffron coloring strength could be form 110-250+.
Our saffron has a range of minimum of 230 to 255 degrees of color. The
coloring strength should be clearly posted according to
ISO. Our SARGOL saffron does not contain any other part of the saffron
plant except the pure red stigmas, which contain ALL of the spice's
aroma, flavor and natural dye
A special note about toasting OUR Sargol saffron:
do not do it! It is
unnecessary to dry OUR Sargol saffron any further because it has already
been processed to exactly the right dryness for either steeping or
crushing into powder. The only reason you might read elsewhere that
saffron threads should be further dried prior to use is that lower grade
saffron may contain too much moisture for good release of its aroma,
color and flavor. Since Sargol saffron contains no excess moisture we do
not want you to take a chance of spoiling it by scorching it over a
flame, on top of the stove or in an oven.
When using saffron threads, begin your recipe preparation by steeping the
threads to extract their essence for a minimum of 20 minutes in addition
to cooking/baking time. This can be done in alcohol, an acidic liquid or
a hot liquid.
Saffron does not "boil away" when it is added at the beginning of the
cooking process. Threads continue to release flavor and aroma for 12
hours or more.
Saffron is water-soluble. Do not add it to fat in your cooking/baking
preparation.
Avoid working with a whisk when using saffron threads as they get
tangled in the wires, preventing you from distributing their flavor and
color evenly in a dish.
Wooden utensils tend to absorb saffron easily so avoid using them when
working with saffron.
